This is a yummy White Chicken chili I made.
1 tablespoon olive oil
1 cup chopped onion, frozen or fresh
2 teaspoons chopped garlic, jarred or fresh
1-3/4 pounds chicken tenders, cut into quarters
1 packet (1.5 ounces) taco seasoning mix
1 cup water
1 can (13.75 ounces) artichoke hearts, drained and cut into quarters (photo 2)
1 cup diced fresh tomatoes
1 can (15 ounces) white beans, drained and rinsed
1 tablespoon chopped fresh cilantro (optional)
Directions
1. In 12-inch straight-sided skillet, heat oil over medium-high heat. Add onion; sauté until softened, 3 to 5 minutes.
2. Add the garlic, chicken and 1/2 teaspoon of the taco seasoning mix to the onion; cook until the chicken is no longer pink, about 5 minutes.
3. Stir the remaining taco seasoning and water into the chicken mixture. Bring to boiling. Add the artichoke hearts, tomatoes and beans; simmer, uncovered, 5 minutes. Garnish with chopped fresh cilantro, if desired. Makes 6 servings.
